Pumpkin overnight oats topped with Greek yogurt, pecans, and cinnamon

Descriptions

Pumpkin Overnight Oats are a simple no-cook breakfast that’s perfect for busy mornings and fall meal prep. Pumpkin purée adds natural creaminess and classic pumpkin flavor, while Greek yogurt and chia seeds give the oats a satisfying texture.

Top your oats with chopped pecans, a drizzle of maple syrup, or a sprinkle of cinnamon for an extra cozy finish.

Directions

Step 1

Add the rolled oats, Greek yogurt, pumpkin purée, almond milk, chia seeds, maple syrup, pumpkin pie spice, cinnamon, vanilla extract, and salt to a mason jar or airtight container.

Step 2

Stir thoroughly until all the ingredients are evenly combined.

Step 3

Cover the jar and refrigerate for at least 6 hours or overnight.

Step 4

In the morning, stir the oats well. If they are too thick, add a splash of almond milk.

Step 5

Top with chopped pecans, pumpkin seeds, extra cinnamon, or a drizzle of maple syrup.

Step 6

Enjoy cold straight from the refrigerator.

Note's

  • Use old-fashioned rolled oats for the best creamy texture.
  • Don’t use steel-cut oats because they won’t soften properly overnight.
  • Use pure pumpkin purée rather than pumpkin pie filling.
  • For extra protein, use Greek yogurt with a higher protein content.
  • If you prefer sweeter oats, add another teaspoon of maple syrup.
  • You can prepare the oats up to 3 days ahead and keep them refrigerated.
  • Add toppings just before serving for the best texture.

½ cup plain Greek yogurt

¼ cup pure pumpkin purée
