Descriptions
Chicken noodle soup is easy to portion and easy to make softer by cooking the noodles a little longer and adding more broth. The vegetables are optional because tolerance and fiber recommendations vary by stage of recovery.
If your clinician has recommended a very low-fiber period, keep the soup simple with chicken, broth, and noodles. Add peeled vegetables only when they fit your instructions.
Directions
Bring the broth to a gentle simmer and add the chicken.
Cook until the chicken is fully cooked, then remove it and shred it into small pieces.
Add the egg noodles to the broth and cook until very tender.
If using vegetables, add only peeled, finely diced vegetables and cook them until very soft.
Return the shredded chicken to the pot and simmer for a few minutes so everything is hot.
Add extra broth if needed and serve warm.
Note's
- Cook noodles slightly longer for a softer bowl.
- Vegetables are optional and should match your current diet instructions.
- Use low-sodium broth when you want more control over salt.
- Freeze without noodles for best texture, then add freshly cooked noodles when reheating.
Serving Suggestions
Serve in a small bowl first if you are easing back into solid foods under medical guidance. Plain white toast may be added when permitted.
Storage and Reheating
Refrigerate for up to 3 days. The noodles will absorb broth, so add more liquid when reheating. For freezing, freeze the chicken-and-broth base separately from cooked noodles.

Important Medical Note
This recipe is general food information, not medical treatment. Diverticulitis diets can change by stage. During an acute flare, a healthcare professional may recommend clear liquids for a short time and then a gradual return to low-fiber foods as symptoms improve. Follow your own clinician’s instructions and seek medical care for severe or worsening symptoms.
