Descriptions
Creamy chicken and rice soup is a comforting option when you want a spoonable dinner with tender textures. The rice cooks directly in broth, helping it become soft, while shredded chicken adds protein without requiring a heavy sauce.
The creamy element is intentionally light. Use milk only if dairy fits your current diet and you tolerate it well. During a very low-fiber period, leave out the carrots and keep the soup to chicken, rice, broth, and a small amount of milk if permitted.
Directions
Add the chicken and broth to a soup pot. Bring to a gentle simmer and cook until the chicken is fully cooked.
Remove the chicken, let it cool slightly, and shred it finely with two forks.
Add the white rice to the broth and simmer until the grains are very tender.
If permitted, add finely diced peeled carrots and cook until completely soft.
Return the shredded chicken to the pot. Stir in the milk over low heat if using; do not boil hard after adding milk.
Adjust the consistency with extra broth and serve warm in moderate portions.
Note's
- Omit carrots during a stricter low-fiber stage if advised.
- Use lactose-free milk if that is better tolerated.
- Add extra broth for a thinner, softer soup.
- Avoid spicy seasoning blends during digestive recovery if they bother you.
Serving Suggestions
Pair with plain white toast if that fits your plan. For a simpler bowl, skip all vegetables and serve only the soft chicken, rice, and broth.
Storage and Reheating
Cool promptly and refrigerate for up to 3 days. Rice continues to absorb liquid in the refrigerator, so add broth while reheating. Reheat until steaming hot.

Important Medical Note
This recipe is general food information, not medical treatment. Diverticulitis diets can change by stage. During an acute flare, a healthcare professional may recommend clear liquids for a short time and then a gradual return to low-fiber foods as symptoms improve. Follow your own clinician’s instructions and seek medical care for severe or worsening symptoms.
